History: Dominio del Aguila is an organic certified family winery in La Aguilera, a small town in Ribera del Duero, run by the couple Jorge Monzón and Isabel Rodero, vigneron and architect respectively since 2010. The domain has 30 hectares of very old vines , plus an additional 5 relatively young hectares (less than 50 years old). They have also supplied grapes to some of the region’s top wineries for over 10 vintages. Jorge comes from a family of many generations of vignerones. He studied ‘Soil, viticulture and oenology’ at the Universities of Bordeaux and Burgundy. He has worked with prestigious wineries such as Domaine De La Romanée-Conti, in Spain with the Vega Sicilia Group, and as technical director of Bodegas Arzuaga-Navaro. Since 2013 he has been working full time at Dominio del Águila. Canta la Perdiz comes from a single vineyard located in the town of La Aguilera. This south facing site is planted with 19th century ungrafted vines.
Tasting Notes:
Visually, it shows an intense cherry-red color, very clean and bright, with a deep layer and a garnet rim. On the nose, ripe fruit takes center stage, accompanied by subtle background notes reminiscent of sweet spices such as vanilla and cinnamon, as well as wildflowers. A very expressive and elegant wine, it offers a powerful entry on the palate with a silky texture and gentle tannins. Flavors of ripe red and black fruit (typical of Tempranillo) dominate, along with secondary hints of spice and toasted notes from its long barrel aging. A highly versatile red that pairs especially well with all kinds of main dishes featuring red meats, roasts, and game.
