History: Querena is one of the cavas made by Cava’s Uveste. This ambitious wine estate has its origins in 2007 in the Requena region. It is the transition from the coastal region around Valencia to the higher central plateaus of Spain. The vineyards here are between 550-750m altitude, so they benefit from strong cooling during the winter and during the night. This means that a wine region located so south can still be ideal for the production of sparkling wines. From the beginning, quality was paramount and organically responsible wines were chosen, in which climate and ecology are of paramount importance. The cellars are therefore completely carved into the rock, they work with environmentally friendly materials such as large amphorae in which the wine ferments, solar panels that completely cover the energy consumption for most of the year, etc. The largest part of the vineyards is therefore already ecologically certified and the intention is that this will be achieved for 100%. Despite its young age, Cava’s Uveste guarantees quality sparkling wines and they have already been awarded several times, both in Spain and internationally.

Tasting notes:

Fresh on the nose with hints of raspberries and grenadine, this dry, summery sparkling wine offers a fine, full taste with a delicate pearl and a round, lively finish. Delicious as an aperitif or paired with all kinds of tapas, it perfectly captures the Mediterranean spirit of Valencia.
