History:  Since 1999, Stefan Steinmetz has been in charge of the winery’s daily management. The transition to the next generation not only ensured the continuation of the project but also brought improvement in all areas of winemaking, thanks to Stefan’s expertise and the use of modern production techniques. In addition to placing great importance on the terroir, Stefan Steinmetz employs traditional methods, based on spontaneous fermentations with partial malolactic fermentation occurring in parallel. He later halts fermentation naturally, which means that the wines, although dry, can end up with a small amount of residual sugar (rarely more than 20 grams per liter), as was in fact done in the region in the old days. Over the years, he has perfected this style, and the wines have gained elegance and refinement without losing any of their aromatic complexity.

Tasting Notes: 

Golden yellow with green reflections. Filigree and subtle bouquet. It’s all about finesse and here I notice mineral, fruity, and herbal notes. The palate confirms the mineral character, but above all, it is provided with a good fruit intensity. The finale is slowly becoming apparent.
