History: Tomás Postigo has a degree in Chemistry from the Autonomous University of Madrid and in Oenology from the University of Valladolid. Postigo arrived in the Ribera del Duero in 1984 and is considered one of the most knowledgeable winemakers in the area. From 1988 to 2008, while in Peñafiel, he created and managed one of the most famous and emblematic wines of the Denomination of Origin (D.O.). During this time, Tomás Postigo pioneered new fields of diverse winemaking, such as the use of Cabernet Sauvignon and Merlot, the implementation of drip irrigation in the Ribera del Duero vineyards, and the use of French oak for the red wine aging as well as the production of wines with movement of grapes fed by gravity. Tomás Postigo is the first winery to receive the Carbon Footprint, an ecological award that guarantees sustainable and ecological practices that do not harm the environment. Tasting Notes:
On the nose, the main protagonist is the ripe red and black fruit (characteristics of Tempranillo) full of freshness, along with other more subtle nuances that appear after letting it rest in the glass, reminiscent of sweet spices, balsamic and a light touch mineral. In the mouth, it has an intense entry and very soft ripe tannins. In its flavor, notes of ripe fruit predominate in its flavor, along with light spicy nuances in the background.
